A Slow Cooker Reuben Sandwich is perfect for leftover corned beef after your St. Patrick’s Day dinner with sauerkraut, cheese and dressing.

Ok, let’s be honest, you are going to want to make a second (and third) corned beef just for this sandwich. I have a secret  not so secret addiction to slow cooker sandwiches and this Sandwich is almost my favorite one.

Sabrina’s Slow Cooker Reuben Sandwiches

The best part about this Slow Cooker Reuben Sandwich is how incredibly easy the recipe is. It is based on my Corned Beef Dinner post and takes just a couple of alterations in crafting the Reuben sandwich. You can also use the recipe for the Crispy Slow Cooker Corned Beef, but realize there won’t be cabbage in that one so you may want to grab a jar of sauerkraut instead. If you want to switch things up, try topping that crispy corned beef with these Roasted Cabbage Steaks

Slow Cooker Reuben Sandwiches Recipe

Ingredients
 

Thousand Island Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1/3 cup sweet pickle relish
  • 1 pinch salt
  • 1 pinch coarse ground black pepper

Quick Sauerkraut:

  • 1 cup cooked cabbage , from Slow Cooker Corned Beef Dinner
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon caraway seeds , crushed
  • 1/4 teaspoon kosher salt

Sandwich Ingredients:

  • 4 hoagie rolls
  • 2 tablespoons unsalted butter
  • 1 pound corned beef , cooked, from Slow Cooker Corned Beef Dinner
  • 4 slices Swiss cheese

Instructions

Thousand Island Dressing:

  • Combine all the ingredients and let sit.

Quick Sauerkraut:

  • Combine all the ingredients and let sit.

Sandwich:

  • Cut the hoagie rolls in half and butter them.
  • Toast the hoagie rolls.
  • If desired, broil the corned beef in the oven for 30-45 seconds, until hot.
  • Spread thousand island dressing on both sides of the roll, then layer with corned beef slices, sauerkraut and Swiss cheese.

Sabrina’s Tips

I do love a good crunch to my sandwiches. If you want the corned beef for your Reuben sandwich to be even crispier, broil it for 30-45 seconds on the top shelf of your oven for deliciously caramelized slices of corned beef. Alternately, you can brown them in a skillet on medium-high heat for a couple of minutes. Anytime you start to get some charring around some edges it means deeper flavor. This little step can enhance the dish beautifully.

Kitchen Tools and Ingredients

  • Slow Cooker: I love my slow cooker. It has been a workhorse for me and I use it pretty regularly. With so many great recipes designed for it and slow cooker alternatives to other recipes, you really get your money’s worth out of a good slow cooker.
  • Sauerkraut: If you want to skip the cabbage or if you ran out, you can use a jarred sauerkraut. You might already have a favorite or you can use one from a brand you already love. Vlassic is my favorite brand of sauerkrat!
  • Thousand Island: Bob’s is my absolute favorite brand of Thousand Island if you’re looking for a jar to try. I also LOVE their blue cheese dressing and have eaten it since I was a kid growing up.

Cooking Tips

  • Butter the hoagie roll lightly before toasting. Trust me on this, it is infinitely better!
